Homemade Burgers 
& Sweet Potato Wedges

1 large tomato

1 yellow onion

1.5 lb sweet potatoes

2 scallions


Meat

1 lb lean ground beef

4 bacon strips

1 tsp Cajun seasoning

Method

To begin, preheat the oven to 425ºF.


Peel and wash the sweet potatoes, then cut them into wedges. Place onto an oven tray, drizzle with olive oil, and season with salt, pepper, and 1 tsp Cajun seasoning. Mix everything together and spread evenly across the tray. Place into the preheated oven for 25 minutes.


Meanwhile, chargrill the buns on a griddle pan over medium heat to your liking and set aside for later. Now peel and cut the onion into slices. Then trim, wash and finely chop the scallions.


In a mixing bowl, use your hands to mix together the ground beef, salt, pepper, and a splash of red wine vinegar. Divide into 4 and shape into burger patties.


With 10 minutes to go until the sweet potato wedges are cooked, add the burgers and onion to the large pre-heated griddle pan on medium heat. After 5 minutes, flip the burgers. Add the bacon to the pan, turning after a couple of minutes.


Cut the tomato into slices and add a slice to the base of each bun. Once the burgers are cooked, place them onto the buns. Top with the bacon and onions. Serve the sweet potato wedges between four plates, sprinkle over the chopped scallions and add the burgers.
