Quick & Easy Shrimp Noodles

4 bok choy
2 inch piece fresh ginger
4 scallions

12 oz peeled raw shrimp

600g straight-to-wok noodles
Condiments
1 tbsp fish sauce
2 tbsp hoisin sauce
2 tbsp oyster sauce
1 chicken stock cube
Method
Begin by bringing 1 liter of chicken stock to a boil in either a wok or pan.
Stir in 1 tbsp fish sauce, 2 tbsp hoisin sauce, 2 tbsp oyster sauce, grated ginger, and shrimp. Leave to simmer for 2 minutes.
Once the shrimp have turned pink, add the bok choy and cook for a further 2 minutes.
Next, add the noodles. Simmer for another 2 minutes.
Chop the scallions. Then, dish up the noodles using tongs and serve the remaining broth using a ladle. Scatter with the chopped scallions.
