
Sesame Salmon & Sweet Potato Mash

1 head broccoli

1 inch piece fresh ginger
1.5 lb sweet potatoes

4 skinless salmon fillet

Method
Preheat the oven to 425ºF and prepare a large saucepan of boiling salted water.
Peel and chop the sweet potato into chunks and add to the pan of boiling water for 15 minutes.
To create the marinade, mix together the 2 tbsp of soy source, grated ginger, crushed garlic, 2 tbsp of honey, and 1 tbsp of sesame oil in a mixing bowl. Place the salmon and broccoli on a baking tray. Season with salt, pepper, and spoon over the marinade you just created. Cook in the preheated oven for 15 minutes.
Once the sweet potatoes have softened, mash together with the juice from the lime juice, catching any pips and a dash of sesame oil.
Serve on four plates, the mashed sweet potato, broccoli, and marinated salmon altogether.
