1 red onion

1 red bell pepper

1.5 lb sweet potatoes

1 zucchini

Method

To begin, preheat the oven to 425ºF.


Peel the sweet potatoes and slice them into wedges. Place onto a baking tray and lightly drizzle over olive oil. Then, season with salt, pepper, and 2 tsp paprika. Mix well, ensuring the wedges are well coated and spread evenly across the tray. Place into your preheated oven for 25 minutes.


Meanwhile, cut the zucchini into medium-sized slices. Deseed the pepper and chop it into small chunks. Quarter the red onion and separate its layers. Place the chopped vegetables and whole tomatoes onto a large tray. Lightly drizzle with olive oil and season with salt and pepper, then mix everything together. Make sure all the vegetables are spread evenly across the tray and place into the oven, alongside the wedges, for 20 minutes.


Slice the rump steaks into bite-sized pieces and sprinkle over 4 tsp Cajun seasoning. Use your hands to rub the seasoning into the steak pieces. Then, heat a drizzle of olive oil in a frying pan over high heat. Transfer the steak bites to the pan, and cook to your taste. 3 mins for rare, 4-5 mins for medium, and 7-8 mins for well done. Turn the steak over every minute until cooked. Then remove the steak and lower the heat. Add the butter and crushed garlic to the plan for 90 seconds. Now add the steak again, making sure all the bites are thoroughly coated in the garlic butter.


Bring everything together and serve between four plates.
