Method
Slice 1 red onion into strips. Then deseed 2 mixed-color peppers and slice them into strips. Set both aside.
Cut 4 skinless chicken breasts into 1.5 cm strips. Heat a drizzle of olive oil in a pan over medium-high heat, add the chicken strips, and stir regularly for 5 minutes.
Add the sliced peppers and onion to the pan. Sprinkle with 4 tsp of fajita spice mix, stir thoroughly and cook with the chicken for a further 5 minutes.
Warm the tortillas according to the packet instructions.
To serve, build your wraps by adding a spoonful each of fresh guacamole and tomato salsa, topped with a helping of the chicken and vegetables. Fold the tortilla from the sides and bottom to complete your fajita.
