5 oz pork chorizo

12 oz long-grain rice


Condiments

1 tsp turmeric

1 vegetable bouillon cube


Frozen

8 oz frozen pea

16 oz frozen seafood mix

Olive oil

Method

Begin by adding 1 liter of boiling water to a heatproof dish. Stir in the vegetable bouillon cube until fully dissolved. Cover and set aside.


Heat the olive oil in a deep frying pan over medium heat. Chop the leek and chorizo and add to the frying pan. Cook for 3 minutes until softened.


Next, stir in the rice, turmeric, and veg stock and bring to a boil. Reduce the heat and leave to simmer for 15 minutes. Then, add the peas and cook for a further 5 minutes.


Stir through the frozen seafood mix and cook for a final couple of minutes until warmed through. Finish by seasoning with salt and pepper.
