Mushroom Stir-fry

1 head broccoli

3 garlic cloves

12 oz white mushrooms

1 red onion

4 oz cashew nuts

10 oz ramen noodles


1 tsp chili flakes

2 tbsp hoisin sauce

1 vegetable bouillon cube


Sesame oil


Begin by separating the broccoli florets, halving any large pieces. Chop the mushrooms, peel, and finely slice the red onion and garlic.

Next, boil water in a pan, add the vegetable bouillon cube and stir until dissolved. Then add the noodles and cook according to the packet instructions. Add the broccoli for the final 4 minutes.

Meanwhile, heat a drizzle of sesame oil in a large frying pan on medium-high heat. Add the red onion and mushrooms and cook for a couple of minutes. Then add the garlic, cashew nuts, and chili flakes, stir and cook for a couple more minutes.

Drain the noodles and broccoli using a colander, reserve a mug of water from the saucepan. Add the noodles, broccoli, and 2 tbsp of hoisin source to the frying pan, stir and cook for a further minute. Loosen with a splash of the reserved starchy water if needed.

Add a drizzle of sesame oil over the pan before serving in four bowls.
